Ripe organic (and non-irrigated) certified organic Chenin Blanc was hand picked by a team of enthusiastic grape pickers prior to the Grape Pickers Lunch. The wine is labelled Grape Pickers Reserve.
The grapes were then crushed, destemmed and pumped into a tank where it is left on skins overnight. The skins are drained and basket pressed the next day and the must was transferred into an open fermenter. The ferment started with wild and natural yeasts and continued at about 30C until finished.
After the end of ferment the new wine was pumped to oak barriques with yeast lees for cellaring underground for 9 months.
The wine was then clarified with milk and bentonite and filtered prior to bottling with natural cork. This wine is not cold settled so wine diamonds (tartaric crystals) may appear in the bottle after prolonged refrigeration.
Alcohol - 13.0 % pH 3.5
Residual Sugar - 0.5 g/L ie dry style
Total SO2 125 ppm, free SO2 30 ppm at bottling |
