A deep purple red colour, palate of rich dark chocolate. This fortified wine is luscious on the palate with a wonderfully rich finish. Beautifully balanced.
Ripe Organic Shiraz was crushed, destemmed, and pumped into a open tank. The ferment is started with wild yeasts and continues at 30C until the ferment has proceeded through a few degrees of sugar.
The must is drained and basket pressed, the juice returned to an open fermenter and the ferment continues. The desired Beaume is reached before adding neutral alcoholic spirit (fortification).
Once the wine has settled it is pumped to oak barriques for cellaring underground for maturation.
When mature the wine is bottled using natural cork.
Alcohol - 18 % pH 3.8
Residual Sugar - 5+ Beame
Total SO2, less than 100 ppm
Store the bottles standing up, as the cork is well sealed with sugars. Proteins and tartrates may form a "crust" in the bottle, stand vertically for a minimum of 24 hours then decant before serving.
